What I Ate Wednesday is a common theme among food + nutrition blogs. You won’t see me post every single week, but it’s fun to have a glimpse into what other people are eating.

I hope it brings you inspiration + motivation to eat a colorful diet full of whole plant foods that leaves room for fun + treats!

I don’t eat 3 square meals every day, but it just so happened that’s how I ate today…

Breakfast: Green Smoothie

1 cup unsweetened almond milk
1 ripe banana
1 giant handful of spinach
1 kale leaf
1 scoop chocolate Vega One
ice + water

This smoothie is my go-to breakfast. It’s super yummy, filling, and extremely nutritious! I don’t have time to sit down and eat solid food for breakfast during the week and I LOVE being able to get in a serving of greens before lunchtime. Vega One packs a punch with protein and loads of nutrients so it doubles as a multivitamin.

Lunch: Bangkok Curry Bowl

I grabbed lunch at Native Foods Cafe with some coworkers and while I was going to try the new Thai Meatball Bowl, I opted for the Bangkok Curry Bowl since they were out of seitan meatballs. Definitely getting that Thai Meatball Bowl next time I go, it looks amazing!

This bowl was the perfect blend of whole grains (brown rice, under the mountain of kale), veggies + greens, and lean protein (tofu). The curry sauce was pretty light and so yummy!

I also had some of their handmade lavender lemonade, and diluted it  to half-strength with water to take the sweetness down a notch. We also had dessert–I tried the brownie! What a great Wednesday, right?

Dinner: Bean Chili

Busy day for me so coming home to leftovers ready-to-eat, thanks to my meal prep on Sunday, was perfect. This chili comes from Kris Carr’s Crazy Sexy Kitchen cookbook. I garnished it with some  yummy avocado + cilantro. I also had a  cornbread muffin that I made from Isa Chandra Moskowitz’s Isa Does It cookbook. I inadvertently left the oil out when making these muffins so they’re fat-free, and still delicious!

The chili was simple to make and very nutritious, delicious, and filling–exactly what I needed after a grueling hour on the treadmill tonight (springtime races will be here before we know it)!
